To usher in the festive spirit, International cuisine restaurant Ambrosia is organising a two week flambé food festival – ‘A Flambé December’. Apart from titillating the taste buds, the festival is a visual offering to those who enjoy food being specially created to suit their preferences. So come enjoy the culinary adventure the flambé procedure of cooking offers.
Flambé, a technique used in cooking is not only is a visual delight but also adds a special flavor to food. Often labeled as a ‘dramatic’ cooking technique, in flambé liquor such as rum, cognac, brandy etc is added to food that is set alight. According to Chef Balaji, Ambrosia was born out of a need to offer Bangaloreans a haunt where one can enjoy tasty flambé creations and wine. “Bangalore is a foodie’s paradise and being a foodie myself I am very particular about how my food is made. At Ambrosia you get to make your order very specific according to your preferences. Also the food is made in front of your own eyes and the flambé creations are a visual treat as well.” he says.
The two week food festival will offer food enthusiast items such as Beef Burgundy, where a beef fillet steak is flamed in brandy and finished in a crushed black & green pepper corn sauce with double cream. People who love white meat can opt for Chicken Cafreal, which is a chicken breast marinated with green chilly and flambéed with white wine sauce or Chicken Chesseure where marinated boneless leg pieces of chicken are flamed with brandy sauteed with onion, garlic, mushroom , green peppercorn , tomato topped off with a touch of demi glaze. Sea food lovers can choose between Indian Salmon Fillet Steak, Peri Peri Seafood or Mixed Seafood Pasatta. The people at Ambrosia have also specially created dishes for vegetarians, such as Ratatouille Nicoise, Mushroom Ragoutand many more. A near heaven experience with flambéed food can be topped off with desert offerings such as Drunken Banana and Mixed Fruit and a flambé classic- Chocolate Brownie.
